Vegetarian Fajitas
- Ingredients:
- 1 pkg. vegetarian beef strips or chicken strips
- 2-3 portobello mushroom caps, sliced (optional)
- 1 green bell pepper, sliced
- 1 small onion, sliced
- Soy sauce
- Soy sauce
- Chili powder
- Cumin
- Garlic powder
- 2 avocados
- 1 pkg. pico de gallo (optional)
- 1 pkg. sour cream or Tofutti Sour Supreme (optional)
- 1 can vegetarian refried beans (optional)
- 1 pkg. flour tortillas
Marinate vegetarian beef or chicken strips and mushroom strips in soy sauce, chili powder, cumin, and garlic powder for 10-15 minutes. Halve avocados, then slice in both directions and remove pieces with a spoon. Warm tortillas in a pan over medium heat. Sautee vegetarian chicken/beef, mushroom strips, bell pepper, and onion. Roll in tortillas with refried beans and serve with avocado chunks, pico de gallo, and sour cream.
