Tomatillo Salsa

From the Cafe Flora Cookbook by Catherine Geier and Carol Brown.
Ingredients:
8-10 tomatillos, husked and washed (it's good to get at least 10 because there may be 1 or 2 that look bad once you cut them open)
1 Tbsp. chopped garlic
3 Tbsp. brown rice syrup or honey
3 scallions, thinly sliced
3 Tbsp. diced red onion
1 Tbsp. chopped fresh cilantro
1 tsp. minced jalapeno, seeds removed
1/2 tsp. salt

Roughly chop the tomatillos and put in a food processor or blender with the garlic and brown rice syrup/honey. Pulse until you have a chunky sauce. Pour in a bowl and mix in the remaining ingredients.
