Thai Pizza

Ingredients:
Pizza dough (thawed if frozen)
Peanut sauce
1-1 1/2 c. mozzarella
1 small bunch broccoli
1 carrot
1 can water chestnuts
2-3 green onions
A handful of chopped cilantro
Sriracha (optional)

Preheat oven to 400 degrees. Stretch your pizza dough out on a pan greased with olive oil. While the peanut sauce (recipe below) is cooking, chop the broccoli and microwave for 1 1/2 minutes in a covered microwave container with a couple tablespoons of water and some salt to steam. Slice the carrot into thin discs. When the peanut sauce is ready, spread onto the pizza dough. Add the broccoli, then the mozzarella, then the remaining veggies. Bake for 12 minutes or until the cheese is melted and the crust is slightly browned. Let cool about 5 minutes before slicing. If desired, drizzle with Sriracha before serving.
