Spicy Tomato Chicken Breasts

Ingredients:
1 tbsp. olive oil
2 tomatoes, chopped into chunks
1-1 1/2 tsps. salt
4-5 jarred jalapeno slices, cut into small pieces
dash cumin
dash chili powder
dash oregano
2-3 tbsps. chopped garlic
2-3 grinds fresh cracked black pepper
2-3 Quorn chicken breasts, cooked
1 box Spanish rice mix (optional)

Get your Spanish rice cooking as per package directions. While it cooks, heat the olive oil in a pan on medium heat. Add the tomatoes, sprinkle with salt. Cook until they get soft and leak out lots of juice. Add jalapeno slices and spices and cook until most of the juice evaporates (Note: you may want to add the garlic closer to the end because it will become bitter if it burns). To serve, pile some Spanish rice on a plate. Add a chicken breast on top of the rice and spoon tomato sauce over the chicken breast.
