Soyrizo and Sweet Potato Tacos
From Today I Ate user bricolaged.- Ingredients:
- 1 sweet potato, large dice
- 1/2 white or yellow onion, chopped
- 1-2 cloves of garlic, minced
- About 6 oz. soyrizo (remove from casing)
- Butter and/or oil
- Corn tortillas
1. Bring water with a little salt to a boil. Add sweet potato and cook for 2-3 minutes, or until tender. Drain.
2. Heat about a tablespoon of oil or butter in a pan. Saute the onion until translucent, then add garlic.
3. Add potatoes and crumble chorizo into pan. Cook until chorizo and potatoes are lightly browned on both sides.
4. Serve in corn tortillas.
