Simple Coconut Curry Sauce
From Can You Stay for Dinner?.- Ingredients:
- 1/2 c. light coconut milk
- 2 Tbsp. soy sauce
- 1 Tbsp. rice wine vinegar
- 1 Tbsp. brown sugar
- 1 tsp. toasted sesame oil
- 1/2 tsp. curry powder
- 1 clove garlic, minced
- 1/2 tsp. Sriracha hot chili sauce
- 2 tsp. cornstarch
Whisk all ingredients in a small saucepan and bring to a boil over medium heat. Reduce heat and let the mixture simmer for about 2-3 minutes until glossy and thick enough to coat the back of a spoon. Use immediately to coat vegetables, chicken, fish, or tofu.
