Lemon Loaf

Ingredients:
For the loaf:
1/2 cup butter or margarine
1 cup sugar
2 eggs
Grated rind of 1 lemon or 1 tsp. dried
1 1/2 cups flour
1/2 tsp. salt
1 tsp. baking powder
1/2 cup milk
For the glaze:
Juice of 1/2 lemon
1/4 cup sugar

Cream butter and add sugar gradually. Add eggs and beat well. Stir in rind. Mix dry ingredients and add to butter mixture alternately with milk, mixing well. Bake in a greased 8 1/2 x 4 1/2 x 2 1/2 loaf pan in a moderate oven (350 degrees) for 50 to 60 minutes. Remove from oven. Pour glaze over loaf while it's still warm. Let cool 10 minutes. Remove from pan and cool completely before slicing.
This recipe can be made in a bread maker by adding 1/2 hour to the cooking time, using the timer and the light crust setting. Cool for 10 minutes and remove from bread pan. Glaze.
