Jailhouse Rolls

Ingredients:
1 1/2 c. lukewarm water
1 pkg. dry yeast
1 c. mashed potatoes
2 sticks butter or margarine
3 whole eggs
7 c. flour
1 1/2 tsp. salt
1 c. sugar

Mix dry yeast in lukewarm water; blend and set aside for later use.
Mix potatoes, butter, eggs, salt, and sugar; blend into flour. Add yeast water and blend well. Place in greased bowl. Cover with cold, damp cloth and place in refrigerator until ready for use.
Roll out like a pie crust (though not as thin). Cut to desired size and arrange almost touching in greased pie tins. Butter tops. Let stand for several hours. Bake in 450 degree oven for about 10-12 minutes.
Makes about 6-7 pie tins of rolls.
