Crispy Herbed Goat Cheese Fritters

Ingredients:
200 grams (5 ounces) plain goat cheese
1 tablespoon minced parsley
2 teaspoon minced thyme leaves, divided
3/4 teaspoon minced rosemary leaves
30 grams (1/3 cup) panko breadcrumbs
25 grams (2 tablespoons) olive oil
18 grams (2 tablespoons) flour
1 egg, beaten
1 teaspoon water
Kosher salt
Salad greens
Thinly sliced shallot
Lemon juice
Olive oil
Flaky salt

For the Fritters
Line a baking sheet with parchment paper.
Combine the goat cheese, parsley, 1 teaspoon of the thyme leaves and a pinch of salt in a bowl and mix with a spoon or fork until well combined.
Form the cheese into six equal sized balls (about 2 tablespoons of the cheese) by rolling firmly in your hands, then flatten each into a patty between your palms.
Set on the prepared baking sheet and put in the freezer for 10 minutes.
Meanwhile, get three bowls ready for the coating mixes.
In one bowl, mix together the remaining thyme leaves, rosemary, panko, and olive oil.
In another bowl mix together the flour and a big pinch of salt.
In the last bowl, whisk together the egg and water.
Once the cheese has been in the freezer for 10 minutes, remove and coat each patty into the flour, dip into the egg, then roll in the breadcrumbs.
Place on the baking sheet and return to the freezer for 30 minutes.
Preheat your oven to 425ยบ F.
Once the fritters have been in the freezer for 30 minutes, place them directly in the oven and bake for 8-10 minutes. The breadcrumbs will turn a light golden brown on the edges.
Remove from the oven and let cool for 5-10 minutes before handling.

To Assemble & Serve
Toss together a simple salad by combining salad greens, shallot, a squeeze of lemon juice, a drizzle of olive oil, and a pinch of flaky salt.
Arrange the salad on a serving plate and arrange the fritters alongside it.
Enjoy while the fritters are still warm!
