Chunky Chickpea Guacamole
From Laurel, who got it from somewhere else.- Ingredients:
- 2 (or 3 or 4) avocadoes
- 1 can chickpeas, drained
- 1 can diced tomatoes with green chilies, NOT drained
- 1 small bunch cilantro, chopped up
- 1/2 sweet Texas onion, diced
- 2 cloves garlic, minced
- 1 small jalapeno, minced (optional)
- 1 tsp-1 Tbsp cumin
- 1 tsp-1 Tbsp chili powder
- Salt and pepper to taste
Mush up avocadoes, then add chickpeas and mush up. Add all the rest of the ingredients and stir in. Season to taste. Consume mass quantities.
