Cafe Flora Cheesy Grits
From the Cafe Flora Cookbook by Catherine Geier and Carol Brown.- Ingredients:
 - 1 c. heavy cream
 - 2 c. water
 - 1 tsp. salt
 - 3/4 c. quick grits
 - 1 tsp. hot pepper sauce
 - 1/2 c. grated smoked mozzarella cheese
 
		Mix the cream, water, and salt in a medium saucepan over medium-high heat.  Bring to a boil, and gradually stir in the grits, whisking constantly to avoid lumps.  Reduce the heat to medium-low and cook for 5 minutes, stirring occasionally.
		Add the hot sauce and grated cheese, stirring until the cheese is completely melted.  Serve immediately.
