Balsamic Marinated Roasted Beets
Slightly modified from Melissa's.- Ingredients:
- 1/2 cup balsamic vinaigrette (balsamic vinegar and olive oil)
- 1 pound peeled beets, chopped into cubes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
Place the vinaigrette and beets in a large bowl. Cover and refrigerate for an hour.
Preheat oven to 425º.
Lightly oil a sheet pan and add the beets in a single layer. Season with salt and pepper and roast in the oven until heated through and browned, about 20-35 minutes.
Makes 6 servings.
