Mary Nell's Favorite Recipes - Meat

 

 

FANTASTIC PORK FAJITAS

 

1 lb. lean boneless pork

2 cloves garlic, minced

tsp. oregano

1/2 tsp. cumin

1 tsp. seasoned salt

2 T orange juice

2 T vinegar

Dash of hot pepper sauce

Slice pork across grain into 1/8 " strips. Marinate pork strips in garlic, oregano, cumin, salt, orange juice, vinegar and hot pepper sauce for 10 minutes.

1 T oil

1 med. onion, peeled and sliced

1 green pepper, seeded and sliced

4 flour tortillas

green onion tops

shredded lettuce

bottled salsa

Add oil to hot skillet. Sauté onion and green pepper; remove from pan. Stir fry pork until no longer pink, about 3 - 5 minutes. Serve with flour tortillas and accompany with sliced green onion, shredded lettuce and salsa if de sired. Serves 4.

 

 

POPOVER PIZZA

 

2 lbs. ground beef

1 chopped onion

1 1/2 c. bottled spaghetti sauce

8 oz shredded mozzarella cheese

 

Brown ground beef and onion; drain off fat and spread evenly in 9 x 13 pan. Spread meat mixture evenly with spaghetti sauce, then sprinkle with mozzarella and set aside.

1 C flour

1 C. milk

2 eggs

2 T oil

grated parmesan cheese

Combine flour, milk, eggs, and oil; beat until smooth and pour over cheese layer. Sprinkle generously with Parmesan cheese and bake 30 min at 400. Remove and let cool slightly to firm.
