Mary Nell's Favorite Recipes -- Cookies

 

COOKIES

Toffee Squares, Melting Moments, Cream Cheese Sugar Cookies,

Cream Wafers, Chocolate Chip Cookies

  

TOFFEE SQUARES

 

1 cup butter or margarine

1 cup brown sugar

1 egg yolk

1 tsp.. vanilla

2 cups flour

1/4 tsp.. salt

Mix ingredients in order given. Spread in a greased 9 x 13" pan. Bake 25 - 30 min at 350. Crust will still be soft. Remove from oven.

1/2 milk chocolate bar (8 oz)

1/2 c. chopped nuts

Immediately place separated pieces of chocolate on top. Let stand until soft; spread evenly over entire surface. Sprinkle with nuts. Cut in small squares while warm. Makes 6 to 7 doz. squares.

 

 

MELTING MOMENTS

 

1 cup unsifted flour

1/2 cup cornstarch

1/2 c pwd. sugar

3/4 c. butter

1 tsp.. vanilla

In medium bowl, stir together flour, cornstarch and pwd. sugar. In large bowl, beet butter; add flour and vanilla. Cool 1 hour if necessary.

Shape into 1 inch balls. Place on ungreased cookie sheet; flatten with fork. Bake 20 - 25 min at 300 or until edges are lightly browned. Remove and cool completely on wire rack. Store in tightly covered container. Makes about 3 doz. cookies.

 

 

CREAM CHEESE SUGAR COOKIES

 

1 c. sugar

1/2 tsp. salt

1 c. butter, softened

3 oz pkg. cream cheese, softened

1/2 tsp. almond extract

1/2 tsp. vanilla

1 egg yolk

2 3/4 cups Pillsbury Flour

Combine all ingredients. Chill. Roll out dough to 1/8 " thickness. Cut into shapes and bake for 7 - 10 minutes at 365. Cool. Frost and decorate.

 

 

Creamy Butter Filling:

1/4 c. soft butter

3/4 C. pwd. sugar

1 tsp. vanilla

Frost cookies with Creamy Butter Filling.

 

 

CREAM WAFERS

 

1 C. butter or margarine

1/3 c. whipping cream

2 c. all-purpose flour

granulated sugar

Mix butter, cream, and flour thoroughly. Chill 1 hour.

Heat oven to 375. Roll dough 1/8" thick on lightly floured board. Cut into 1 1/2 rounds. Transfer to waxed paper heavily sprinkled with sugar, turning to coat both sides. Place on ungreased baking sheet. Prick in 4 places with fork. Bake 7 - 9 min., or until slightly puffy. Put two cooled cookies together with Filling.

Creamy Butter Filling:

1/4 c. soft butter

3/4 C. pwd. sugar

1 tsp. vanilla

Blend all ingredients.

 

 

NIEMAN MARCUS CHOCOLATE CHIP COOKIES

(Recipe may be halved)

 

2 cups butter

4 cups flour

2 tsp.. soda

2 cups sugar

5 cups blended oatmeal**

24 oz. chocolate chips

2 cups brown sugar

1 tsp. salt

1 8 oz. Hershey Bar (grated)

4 eggs

2 tsp. baking powder

3 cups chopped nuts (your choice)

2 tsp. vanilla

**Measure oatmeal and blend in a blender to a fine powder.

Cream the butter and both sugars. Add eggs and vanilla; mix together

with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips,

Hershey Bar and nuts. Roll into balls and place two inches apart on a cookie sheet.

Bake for 10 minutes at 375 degrees. Makes 112 cookies.
