William and Payton are using anthocyanin extracted from red cabbage to make dye sensitized solar cells. In this image they are demonstrating the spectral range of the dye as a function of pH. As the pH of the solution changes, the dye molecule reacts with the surrounding system and undergoes structural changes that affect it’s maximum absorption energy; this is known as halochromism.
